Air France to offer new menus in Business Class and La Premiere

Air France has hired the services of Michelin-starred chef Daniel Boulud for designing new menus to be offered to its customers traveling in First Class or La Premiere and Business Class cabins. The new meals will be provided on long-haul flights to Paris-CDG from 11 North American destinations.

Daniel Boulud will be creating the new dishes from March itself for a period of one year. Daniel Boulud said, “The dishes I will be preparing will have French roots, but they will be globally inspired. The flavor would be complex, yet completely satisfying and simple.”

The premium customers traveling in La Premiere cabin would be served seasonal dishes. There will be altogether five culinary delights to be offered in this class. A new dish will be offered every three months derived from these five cuisines. The culinary offerings to be available in First Class include Seabass in Vine Leaves, Grape, Farro and Za'atar; Peppered Beef Tenderloin, Spinach Custard, Squash and Cranberry; Tomato Braised Chicken, Basil and Four Bean Medley; Provencal Lamb Chop, Cheese Polenta, Tomato and Zucchini Pesto; and Atlantic Lobster, Bok Choy, Black Rice and Curried Coconut Sauce.

The menus to be offered on business class flights will be different from that of La Premiere. The dishes would be exotic, spicy and warm, and would obviously retain their French roots. Daniel Boulud would be creating four new dishes, which will however be served every two weeks alternately. The major highlights of the menus include Braised Lamb with Edamame and Spring Root Vegetables; Braised Chicken Basquaise with Saffron Rice, Peppers and Chorizo; Moroccan Chicken Tagine with Couscous, Cauliflower and Lemon; and Salmon with Sumac, Chickpea and Fennel.

The dishes in La Premiere will be served on flights to Paris-CDG from Los Angeles, New York and Washington D.C. However, the dishes created for business class customers would be flights to Paris-CDG from Minneapolis, Detroit, San Francisco, Chicago, Miami, Los Angeles, New York, Washington D.C., Houston, Boston and Atlanta.
