Grapevine chef creates four new dishes for AA business class

Book first class or business class flights on American Airlines this fall and get ready to savor new gastronomy delights! Yes, this should, of course, sound music to your ears. At 36,000 feet above in the air be ready to be served with specially crafted dishes.

Chef Sergio Secchi will be creating four new dishes as part of American Airlines’ in-flight menu for first and business class customers traveling this fall. Chef Secchi has been making his family’s recipes each night at Ferrari’s Italian Villa in Grapevine.

Regarding his association with American Airlines, Secchi said that the idea to work on the airline’s new in-flight menu propped up during one of his classes at his Grapevine restaurant.

The new menu to be created by Secchi includes Boccochini with Creamy Leek Sauce, Creste De Galli Beef Bolognaise, Sachetti with Alfredo and Sundried Tomato Coulis, and Pipette Pasta with Spinach and Mushroom Mix.

Secchi found it to be a huge challenge in making pasta dishes on a limited budget, that could be mass-produced by a third party company, packaged and then provided to American Airlines’ in-flight caterer to be placed on its many flights.
